LIT­TLE EGG, SALMON, CREAM CHEESE AND CU­CUM­BER ROLLS

(MAKES 2 EGG ROLLS)

A lit­tle co­conut oil for greas­ing 2 eggs, beaten well with a pinch of salt 2 ta­ble­spoons cream cheese 1/4 cu­cum­ber, sliced thinly us­ing a peeler 50g smoked salmon trout dill for gar­nish (op­tional)

Heat a fry­ing pan and grease it with a lit­tle co­conut oil. Pour half the beaten egg into the pan and make a thin omelette, al­most like a pan­cake. Wait for the egg to lightly brown on one side and flip it over to cook on the other. Re­peat with the re­main­ing egg mix­ture. Lay the omelettes out on a board.

Spread the omelettes with the cream cheese and top with the cu­cum­ber and smoked salmon. Roll them up tightly into a cigar shape and slice into thick rounds. We put ours on skew­ers with a few cu­cum­ber stars.
