LITTLE EGG, SALMON, CREAM CHEESE AND CUCUMBER ROLLS
(MAKES 2 EGG ROLLS)
A little coconut oil for greasing 2 eggs, beaten well with a pinch of salt 2 tablespoons cream cheese 1/4 cucumber, sliced thinly using a peeler 50g smoked salmon trout dill for garnish (optional)
Heat a frying pan and grease it with a little coconut oil. Pour half the beaten egg into the pan and make a thin omelette, almost like a pancake. Wait for the egg to lightly brown on one side and flip it over to cook on the other. Repeat with the remaining egg mixture. Lay the omelettes out on a board.
Spread the omelettes with the cream cheese and top with the cucumber and smoked salmon. Roll them up tightly into a cigar shape and slice into thick rounds. We put ours on skewers with a few cucumber stars.
