Freezer meals

Be­ing a new mother comes with all sorts of de­mands on your time. You have a lot to do and fig­ure out and very lit­tle time to even think about food. Here are some easy, nu­tri­tious recipes you can make ahead and freeze be­fore your due date. Or show th­ese recipes to fam­ily and friends to make you some meals you can pop into the freezer for the days when you just can’t face spend­ing an­other minute in the kitchen – or on your feet.

All meals serve 4


3 ta­ble­spoons but­ter or olive oil 8 eggs 4 ta­ble­spoons wa­ter 4 cups baby spinach 1 cup cherry toma­toes, halved 1 cup grated ched­dar cheese or crum­bled feta cheese 4 flour tor­tillas or cauli­wraps (avail­able from Wool­worths)

1 Melt 2 ta­ble­spoons but­ter or oil in a non-stick pan over medium heat. Whisk the eggs and wa­ter and pour into a warm pan. Stir oc­ca­sion­ally un­til the eggs are cooked. Stir in a lit­tle salt and cracked black pep­per and trans­fer to a plate to cool.

2 Wipe out the pan, put back on medium heat and add an­other ta­ble­spoon of but­ter or oil. Fry the spinach and toma­toes for a few min­utes, stir­ring fre­quently. Trans­fer to an­other large plate to cool.

3 Di­vide the scram­bled eggs be­tween the four wraps. Top each with about a quar­ter of the spinach and tomato mix­ture, then sprin­kle some cheese over be­fore you roll up your wrap (fold in the sides, then roll from bot­tom to top). Place each wrap on a sheet of tin foil and swad­dle. Place each foil cov­ered wrap in a freezer sand­wich bag and freeze un­til needed.

4 To re­heat, re­move foil from wrap and mi­crowave on high for 2 min­utes.


Break­fast is the most im­por­tant meal of the day – and the one new most moth­ers skip they be­cause just don’t get th­ese to it. With wraps tucked the away in freezer, mom can have a good break­fast ready in two min­utes.
