Braaied boere­wors with pap & smoor

1kg boere­wors 2 twigs rose­mary, leaves re­moved 5 plump toma­toes 2 ta­ble­spoons olive oil 2 onions, peeled and chopped 1 clove gar­lic, peeled and crushed 2 ta­ble­spoons honey 1 ta­ble­spoon rose­mary leaves salt and ground black pep­per to taste 2 cups maize meal 4 cups wa­ter 1½ tea­spoons salt


1. Roll boere­wors into rounds and skewer from two sides with rose­mary twigs to keep the shape and in­fuse flavour. Braai over medium coals un­til cooked through.

2. To make the tomato smoor: score an X into the top of each tomato, place in a bowl and cover with boil­ing wa­ter for 1 minute, then drain off the wa­ter and pull the skins off the toma­toes. Chop the toma­toes into small cubes and set aside un­til needed.

3. Heat oil in a pan and fry onions un­til golden. Add the chopped toma­toes, lower heat and sim­mer for 1 hour. Stir in the honey and rose­mary leaves and let sim­mer for an­other 15 mins.

4. To make the pap: mix maize meal and salt with 2 cups of cold wa­ter while bring­ing the other 2 cups of wa­ter to boil in a large pot. Pour the maize mix­ture into the sim­mer­ing wa­ter and stir well. Re­duce heat to low, put a lid on the pap and let it steam for15 min­utes.
