Braaied boerewors with pap & smoor
1kg boerewors 2 twigs rosemary, leaves removed 5 plump tomatoes 2 tablespoons olive oil 2 onions, peeled and chopped 1 clove garlic, peeled and crushed 2 tablespoons honey 1 tablespoon rosemary leaves salt and ground black pepper to taste 2 cups maize meal 4 cups water 1½ teaspoons salt
1. Roll boerewors into rounds and skewer from two sides with rosemary twigs to keep the shape and infuse flavour. Braai over medium coals until cooked through.
2. To make the tomato smoor: score an X into the top of each tomato, place in a bowl and cover with boiling water for 1 minute, then drain off the water and pull the skins off the tomatoes. Chop the tomatoes into small cubes and set aside until needed.
3. Heat oil in a pan and fry onions until golden. Add the chopped tomatoes, lower heat and simmer for 1 hour. Stir in the honey and rosemary leaves and let simmer for another 15 mins.
4. To make the pap: mix maize meal and salt with 2 cups of cold water while bringing the other 2 cups of water to boil in a large pot. Pour the maize mixture into the simmering water and stir well. Reduce heat to low, put a lid on the pap and let it steam for15 minutes.
