4-6 portions Every mom needs a recipe with hidden veg Ingredients 1 onion, finely chopped 1 medium carrot, peeled and grated 2 courgettes, finely chopped 15ml (1 tablespoon) olive oil 500g mince meat 1 x 410g can chopped tomato 90ml tomato purée 1 apple, grated with the peel 60ml (¼c) oat bran Salt & pepper 10ml (2t) chopped herbs of your choice 1 garlic clove, finely chopped
1. Fry the onion, carrot and courgette in olive oil in a deep saucepan until soft. Add the meat and fry until browned. Keep stirring to prevent clumps forming. Add the chopped tomato, tomato purée, apple and oat bran. Season with salt and pepper and let simmer for 30 minutes. Stir often and add a little water if necessary. Add the herbs and garlic at the end.
