Kiddie coleslaw

Enough for 2-4 portions

Ingredient­s ½ small head of white cabbage ½ small head of red cabbage 1 apple 1 medium carrot 30ml (1 tablespoon) unflavoure­d yoghurt 30ml (2 tablespoon­s) mayonnaise Pinch of white pepper Squeeze of lemon juice 60ml (¼ cup) of raisins 2 hard-boiled eggs, cut in quarters

Method

Discard the outside leaves of the cabbages to ensure that you only use clean leaves. Cut the rest into big chunks. Wash the apple and carrot but don’t peel them. Cut into chunks. Chop the cabbage, apple and carrot in your food processor until quite fine. Mix the yoghurt, mayonnaise, pepper, lemon juice and raisins into the cabbage mix. Garnish with the boiled egg. Serve as a salad or light meal.
