Egg & ba­nana flap­jacks

2 ba­nanas 2 eggs 1 ta­ble­spoon but­ter or oil for fry­ing

1. Mash the ba­nanas in a small bowl and whisk in the egg. 2. Heat the but­ter or oil in a non­stick pan over medium heat and fry spoon­fuls of the egg mix­ture for 2-3 min­utes on each side. Re­move from pan and let cool on pa­per towel. 3. Serve with yo­ghurt and fresh fruit.
