Mealiemeal sticks with tomato relish
For the tomato relish 1 tablespoon olive oil 2 tablespoons chopped onion 2 tomatoes, chopped 1 tablespoon tomato paste For the mealiemeal sticks ½ cup milk ¼ cup instant mealiemeal (also known as cornmeal or polenta) ¼ cup Parmesan cheese, grated
1. To make the relish, heat oil in a pan and fry onion until soft. Add the diced tomato and tomato paste, reduce the heat and let simmer until the sauce thickens.
2. Meanwhile, make the mealiemeal sticks by bringing the milk to a boil in a small pot. Remove from heat and add the mealiemeal, stirring vigorously until you have a thick paste. Return pot to low heat and keep stirring until pap is too stiff to stir. Quickly add the cheese, then pour into a small, oiled dish to form a 1cm thick square. Leave to cool then cut into sticks.
3. Serve with the cooled tomato relish.
