Ingredients: 1 tin butter beans, drained and rinsed ½ cup cooked sweet potato 1 tablespoon chopped parsley 1 tablespoon tahini (sesame seed paste found in health shops – or use any nut butter)
1. Preheat oven to 180ºc and line a baking sheet with parchment paper. Combine all the ingredients in a large bowl and mix well. Roll teaspoons of the mixture into balls and place on parchment lined baking sheet. Use a fork to press down lightly on each ball to form a little patty.
2. Bake for about 10 minutes until golden brown on the underside. Flip the bites and bake for 10 more minutes.
3. Remove from oven and allow bites to cool before serving.
