Beany bites

In­gre­di­ents: 1 tin but­ter beans, drained and rinsed ½ cup cooked sweet po­tato 1 ta­ble­spoon chopped pars­ley 1 ta­ble­spoon tahini (sesame seed paste found in health shops – or use any nut but­ter)


1. Pre­heat oven to 180ºc and line a bak­ing sheet with parch­ment pa­per. Com­bine all the in­gre­di­ents in a large bowl and mix well. Roll tea­spoons of the mix­ture into balls and place on parch­ment lined bak­ing sheet. Use a fork to press down lightly on each ball to form a lit­tle patty.

2. Bake for about 10 min­utes un­til golden brown on the un­der­side. Flip the bites and bake for 10 more min­utes.

3. Re­move from oven and al­low bites to cool be­fore serv­ing.
