Mealiemeal sticks with tomato rel­ish

In­gre­di­ents:

For the tomato rel­ish 1 ta­ble­spoon olive oil 2 ta­ble­spoons chopped onion 2 to­ma­toes, chopped 1 ta­ble­spoon tomato paste For the mealiemeal sticks ½ cup milk ¼ cup in­stant mealiemeal (also known as corn­meal or po­lenta) ¼ cup Parme­san cheese, grated

Method:

1. To make the rel­ish, heat oil in a pan and fry onion un­til soft. Add the diced tomato and tomato paste, re­duce the heat and let sim­mer un­til the sauce thick­ens.

2. Mean­while, make the mealiemeal sticks by bring­ing the milk to a boil in a small pot. Re­move from heat and add the mealiemeal, stir­ring vig­or­ously un­til you have a thick paste. Re­turn pot to low heat and keep stir­ring un­til pap is too stiff to stir. Quickly add the cheese, then pour into a small, oiled dish to form a 1cm thick square. Leave to cool then cut into sticks.

3. Serve with the cooled tomato rel­ish.
