NO-BAKE PEANUT BUTTER COOKIES
1 cup rolled oats ¾ cup pitted soft dates (medjool dates) ½ cup natural peanut butter (smooth or crunchy) Chocolate glaze (optional): 1 slab dark chocolate 1 tablespoon coconut oil
1. Place oats in a food processor and blitz until fine. Add dates and blend for 30 seconds, then add peanut butter and blend until a dough ball forms.
2. Roll teaspoonfuls into balls and place on a parchment paper-lined baking sheet. Use a fork to make a cross-hatch pattern on each biscuit.
3. Enjoy as is or make glaze by melting chocolate and coconut oil in a double boiler or in the microwave. Dip one half of each cookie in glaze and place it back on the tray to set. Keep uneaten cookies in an airtight container in the fridge.
