1 cup rolled oats ¾ cup pit­ted soft dates (med­jool dates) ½ cup nat­u­ral peanut but­ter (smooth or crunchy) Choco­late glaze (op­tional): 1 slab dark choco­late 1 ta­ble­spoon co­conut oil

1. Place oats in a food pro­ces­sor and blitz un­til fine. Add dates and blend for 30 sec­onds, then add peanut but­ter and blend un­til a dough ball forms.

2. Roll tea­spoon­fuls into balls and place on a parch­ment pa­per-lined bak­ing sheet. Use a fork to make a cross-hatch pat­tern on each bis­cuit.

3. En­joy as is or make glaze by melt­ing choco­late and co­conut oil in a dou­ble boiler or in the mi­crowave. Dip one half of each cookie in glaze and place it back on the tray to set. Keep un­eaten cook­ies in an air­tight con­tainer in the fridge.
