GINGERBREA­D FLAPJACKS

1¼ cups cake flour 1 teaspoon baking powder ½ teaspoon ground cinnamon ¼ teaspoon ground ginger ¼ cup brown sugar 2 eggs 2 tablespoon­s butter, melted ¼ cup milk 1 cup water butter for frying maple syrup to serve

1. Sift together the flour, baking powder and spices, then stir in the sugar.

2. In a jug, whisk the eggs, milk, water and melted butter together, then pour this mixture into the flour mixture. Use a balloon whisk to mix it all together until you have a lump-free batter. Let the batter rest for 5 minutes.

3. Heat a tablespoon of butter in a non-stick pan over medium heat and fry spoonfuls of the batter until bubbly. Flip over and fry on the other side. Repeat the process with the rest of the batter, using more butter if needed. Serve with a drizzle of maple syrup.
