Baby's first roast turkey dinner

1 teaspoon olive oil

½ sweet potato, peeled and cut into chunks

1 carrot, peeled and chopped

2 courgettes, washed, ends cut off and cut into coins

1 apple, peeled, cored and cut into chunks

¼ cup leftover roast turkey (or cooked chicken)

¼ cup water

1. Heat the oil in a heavy-based saucepan and brown the vegetables. Add the apple, turkey (or chicken) and water. Cover and cook over medium heat for 10 minutes.

2. Remove from heat, drain (keeping a few spoonfuls of the cooking liquid in case you need to thin the purée a little) then blend until you have a smooth purée. (If you don’t have a blender you can pass it through a sieve using a spatula to press it through.)

3. Add a little of the cooking liquid if the purée is too thick.
