Egg mayo sand­wich

2 hard­boiled eggs 1 ta­ble­spoon may­on­naise 1 ta­ble­spoon but­ter salt and pep­per to taste 2 slices low- GI bread

1. Shell the hard­boiled eggs and place into a shal­low bowl. Add the rest of the in­gre­di­ents (ex­cept the bread slices) and mash us­ing a fork or potato masher.

2. Spread about 2 ta­ble­spoons of the mix­ture onto one of the slices of bread, cover the other slice and press down lightly.

3. Use a cookie cut­ter to cut the sand­wich into a shape or sim­ply cut into fingers or tri­an­gles.
