Egg mayo sandwich
2 hardboiled eggs 1 tablespoon mayonnaise 1 tablespoon butter salt and pepper to taste 2 slices low- GI bread
1. Shell the hardboiled eggs and place into a shallow bowl. Add the rest of the ingredients (except the bread slices) and mash using a fork or potato masher.
2. Spread about 2 tablespoons of the mixture onto one of the slices of bread, cover the other slice and press down lightly.
3. Use a cookie cutter to cut the sandwich into a shape or simply cut into fingers or triangles.
