Cat and berry flapjacks
1 cup rolled oats 1 teaspoon baking powder ½ cup full-fat yoghurt 1 banana 2 eggs ½ cup blueberries (fresh or frozen) butter for frying
1 Place all the ingredients, except the blueberries, in a blender or food processor and blend until smooth.
2 Melt 1 tablespoon of butter in a large nonstick pan and place a couple of tablespoons of batter in pan. Sprinkle a few blueberries over each flapjack and fry over mediumhigh heat until bubbles appear. Turn and fry a minute or two on the other side. Repeat process until you’ve used all the batter.
3 Let cool and serve.
