Banana choc chip muffins

2 bananas 2 eggs 1 teaspoon vanilla ½ cup melted butter 1¼ cup cake flour 1 teaspoon baking powder ¼ cup chocolate chips

1. Preheat oven to 180 º C. Line a mini muffin tin with cases or oil well.

2. In a large bowl, mash the bananas with a fork, then add the eggs, vanilla and melted butter. Beat these wet ingredient­s with an electric hand blender until smooth and frothy (or use a balloon whisk).

3. Sift together the flour and baking powder and stir into wet ingredient­s. Lastly stir in the chocolate chips.

4. Spoon batter into oiled mini muffin tin holes, top each with a blueberry or two (if desired) and bake for about 15 minutes. (Remove from oven if a toothpick inserted comes out clean.) Let cool and serve.
