Banana choc chip muffins
2 bananas 2 eggs 1 teaspoon vanilla ½ cup melted butter 1¼ cup cake flour 1 teaspoon baking powder ¼ cup chocolate chips
1. Preheat oven to 180 º C. Line a mini muffin tin with cases or oil well.
2. In a large bowl, mash the bananas with a fork, then add the eggs, vanilla and melted butter. Beat these wet ingredients with an electric hand blender until smooth and frothy (or use a balloon whisk).
3. Sift together the flour and baking powder and stir into wet ingredients. Lastly stir in the chocolate chips.
4. Spoon batter into oiled mini muffin tin holes, top each with a blueberry or two (if desired) and bake for about 15 minutes. (Remove from oven if a toothpick inserted comes out clean.) Let cool and serve.
