2 tomatoes, roughly chopped ½ onion, finely chopped 2 garlic cloves, crushed 3ml xylitol handful mixed herbs (like oregano, thyme and rosemary), chopped
4 wholewheat wraps 8 slices prosciutto or pastrami, torn into strips 125ml ricotta, drained and crumbled
2 handfuls baby spinach 3ml balsamic vinegar 1 Heat the tomatoes, onion, garlic, xylitol and herbs on medium for 10-12 minutes or until thickened. Season and blend until smooth. 2 Place tortillas on baking sheets and spread sauce over. Top with the ham and ricotta. Grill the pizzas under a heated grill for about 2 minutes or until the ricotta has melted. 3 Top with spinach and drizzle with balsamic. Serve immediately.
