2 toma­toes, roughly chopped ½ onion, finely chopped 2 gar­lic cloves, crushed 3ml xyl­i­tol hand­ful mixed herbs (like oregano, thyme and rose­mary), chopped

4 whole­wheat wraps 8 slices pro­sciutto or pas­trami, torn into strips 125ml ri­cotta, drained and crum­bled

2 hand­fuls baby spinach 3ml bal­samic vine­gar 1 Heat the toma­toes, onion, gar­lic, xyl­i­tol and herbs on medium for 10-12 min­utes or un­til thick­ened. Sea­son and blend un­til smooth. 2 Place tor­tillas on bak­ing sheets and spread sauce over. Top with the ham and ri­cotta. Grill the piz­zas un­der a heated grill for about 2 min­utes or un­til the ri­cotta has melted. 3 Top with spinach and driz­zle with bal­samic. Serve im­me­di­ately.
