3 tor­tillas, halved

6 eggs 125ml thick cream hand­ful pars­ley, chopped hand­ful cooked baby po­ta­toes, quar­tered

30cm chorizo sausage, thinly sliced 125ml feta, crum­bled hand­ful cherry toma­toes sweet chilli sauce, to serve sprouts, to serve (op­tional) 1 Pre­heat oven to 200°C. Line a jumbo 6-hole muf­fin pan with over­hang­ing bak­ing pa­per.

2 Line the pre­pared muf­fin tray with the tor­tilla halves, mak­ing sure there are no gaps for the fill­ing to run out. 3 Com­bine the eggs, cream, pars­ley and sea­son. Pour into the pre­pared muf­fin tray.

4 Add the po­ta­toes, chorizo, feta and toma­toes. Bake for about 25 min­utes or un­til golden and set all the way through. Serve with sweet chilli sauce and sprouts.
