Potato stacks

1.2kg medium pota­toes, peeled or un­peeled 20ml dried or fresh oregano 125ml pecorino, finely grated 10ml gar­lic salt

120g but­ter, melted baby herbs, to gar­nish

1 Pre­heat oven to 220°C. Grease a stan­dard 12-hole muf­fin tray. Thinly slice the pota­toes into rings (a man­do­line works best!). Mix through all the re­main­ing in­gre­di­ents. Sea­son. Make 12 stacks and place in the pre­pared tin. Cover with foil. 2 Bake for 30 min­utes. Re­move foil, re­duce oven to 180°C and bake for about 20 min­utes or un­til golden and cooked. Run a sharp knife around each stack and turn out.
