1.2kg medium potatoes, peeled or unpeeled 20ml dried or fresh oregano 125ml pecorino, finely grated 10ml garlic salt
120g butter, melted baby herbs, to garnish
1 Preheat oven to 220°C. Grease a standard 12-hole muffin tray. Thinly slice the potatoes into rings (a mandoline works best!). Mix through all the remaining ingredients. Season. Make 12 stacks and place in the prepared tin. Cover with foil. 2 Bake for 30 minutes. Remove foil, reduce oven to 180°C and bake for about 20 minutes or until golden and cooked. Run a sharp knife around each stack and turn out.
