Icy ginger beer G&T
Serves 6-8 Takes 15 mins + freezing
FOR THE G&T GRANITA 60ml castor sugar 125ml water 125ml gin 500ml tonic water
TO SERVE 1-2L ginger beer
1 For the granita, heat the sugar and water on medium-high, stirring until sugar has dissolved. Reduce to a simmer and continue to heat for 5 minutes. Cool.
2 Mix in the gin and tonic. Place in a freezer container and freeze, scraping the crystals with a fork every 1-2 hours until no more liquid is visible.
3 To serve, scoop granita into glasses and top with ginger beer, to taste. Serve immediately.
