Icy ginger beer G&T

FOR THE G&T GRANITA 60ml cas­tor sugar 125ml wa­ter 125ml gin 500ml tonic wa­ter

TO SERVE 1-2L ginger beer

1 For the granita, heat the sugar and wa­ter on medium-high, stir­ring un­til sugar has dis­solved. Re­duce to a sim­mer and con­tinue to heat for 5 min­utes. Cool.

2 Mix in the gin and tonic. Place in a freezer con­tainer and freeze, scrap­ing the crys­tals with a fork ev­ery 1-2 hours un­til no more liq­uid is vis­i­ble.

3 To serve, scoop granita into glasses and top with ginger beer, to taste. Serve im­me­di­ately.
