Choc pud­ding fridge cake

Serves 8-10 Takes 20 mins + set­ting

300g dark choco­late, chopped 100g but­ter 150g golden syrup 12 fruit mince pies, chopped 80g white choco­late, chopped 3-5 glacé cher­ries few mint leaves

1 Use a dou­ble layer of plas­tic wrap to line a 500ml pud­ding bowl, leav­ing an over­hang for easy re­moval. Heat the dark choco­late, but­ter and syrup in the mi­crowave for about 2 min­utes, stir­ring ev­ery 30 sec­onds un­til melted.

2 Stir the pies through the syrup mix­ture. Spoon into the pre­pared bowl, press­ing down to flat­ten the sur­face. Set in the fridge for at least 2 hours or un­til firm. 3 Turn the pud­ding out onto a serv­ing plate. Heat the white choco­late in the mi­crowave for about 1 minute 30 sec­onds, stir­ring ev­ery 30 sec­onds un­til melted. Pour on top of the pud­ding, al­low­ing it to run down the sides. Add cher­ries be­fore it sets. Store in the fridge for up to 2 weeks. Add mint be­fore serv­ing.
