120g but­ter 125ml cas­tor sugar 250g pit­ted dates, finely chopped 200g packet Marie bis­cuits, crushed 10ml vanilla essence pinch of salt zest of 1 or­ange 80ml des­ic­cated co­conut 1 Line a 19cm x 26cm dish with bak­ing pa­per, leav­ing an over­hang for easy re­moval. Heat the but­ter and sugar on medium, stir­ring un­til dis­solved. Add the dates and stir oc­ca­sion­ally on low heat for about 15 min­utes or un­til soft. 2 Stir in the bis­cuits, vanilla, salt and zest. Press evenly into the pre­pared dish. Press co­conut on top. Re­frig­er­ate un­til firm. Cut into 22 fin­gers. Store in an air­tight con­tainer for up to a month.
