120g butter 125ml castor sugar 250g pitted dates, finely chopped 200g packet Marie biscuits, crushed 10ml vanilla essence pinch of salt zest of 1 orange 80ml desiccated coconut 1 Line a 19cm x 26cm dish with baking paper, leaving an overhang for easy removal. Heat the butter and sugar on medium, stirring until dissolved. Add the dates and stir occasionally on low heat for about 15 minutes or until soft. 2 Stir in the biscuits, vanilla, salt and zest. Press evenly into the prepared dish. Press coconut on top. Refrigerate until firm. Cut into 22 fingers. Store in an airtight container for up to a month.
