15ml bi­car­bon­ate of soda 30ml milk 875ml cake flour 20ml ground ginger 3ml salt 375ml sugar 250g but­ter, melted 3ml caramel essence 125ml golden syrup ½ x 385g tin con­densed milk 1 Pre­heat oven to 180°C. Dis­solve the bi­carb in the milk. Sift to­gether the flour, ginger and salt, then stir in the sugar. Make a well in the cen­tre and stir in the milk mix­ture and re­main­ing in­gre­di­ents un­til it comes to­gether. 2 Shape into 15ml balls and place on bak­ing pa­per lined trays. Bake for about 10 min­utes or un­til golden. Cool on trays.
