The best ginger biscuits
Makes about 50 Takes 1 hr + cooling
15ml bicarbonate of soda 30ml milk 875ml cake flour 20ml ground ginger 3ml salt 375ml sugar 250g butter, melted 3ml caramel essence 125ml golden syrup ½ x 385g tin condensed milk 1 Preheat oven to 180°C. Dissolve the bicarb in the milk. Sift together the flour, ginger and salt, then stir in the sugar. Make a well in the centre and stir in the milk mixture and remaining ingredients until it comes together. 2 Shape into 15ml balls and place on baking paper lined trays. Bake for about 10 minutes or until golden. Cool on trays.
