½ cup sugar 1/3 cup water 1 cup butter 1 cup dark chocolate (70% chocolate or Bourneville) 5 eggs, separated pinch salt 1 Preheat oven to 180C. Line and grease a 20cm square baking tin. 2 In a medium saucepan, stir together the sugar and water and bring to a boil over medium-high heat stirring constantly for about 5 minutes. 3 Remove from heat and add butter and chocolate. Let stand for a minute, then stir until combined. Add the egg yolks, mixing well. 4 In a separate bowl, whisk the egg whites until soft peaks form. Fold egg whites into the chocolate mixture. Pour into the greased baking tin and bake for 30 minutes. Remove from oven, cool in tin on top of cooling rack, then turn out and cut into squares.
