½ cup sugar 1/3 cup wa­ter 1 cup but­ter 1 cup dark choco­late (70% choco­late or Bourneville) 5 eggs, sep­a­rated pinch salt 1 Pre­heat oven to 180C. Line and grease a 20cm square bak­ing tin. 2 In a medium saucepan, stir to­gether the sugar and wa­ter and bring to a boil over medium-high heat stir­ring con­stantly for about 5 min­utes. 3 Re­move from heat and add but­ter and choco­late. Let stand for a minute, then stir un­til com­bined. Add the egg yolks, mix­ing well. 4 In a sep­a­rate bowl, whisk the egg whites un­til soft peaks form. Fold egg whites into the choco­late mix­ture. Pour into the greased bak­ing tin and bake for 30 min­utes. Re­move from oven, cool in tin on top of cool­ing rack, then turn out and cut into squares.
