MEXICAN MINCE BOWLS
2 cups cooked mince
½ teaspoon ground cumin ½ teaspoon paprika
¼ teaspoon chilli powder (optional) 1 tin red kidney beans, drained 2 cups cooked brown rice
½ cup sharp Cheddar, grated 2 spring onions, finely sliced
½ red pepper, chopped sliced jalapeños, fresh coriander leaves and Greek yoghurt and/or guacamole to serve 1 Heat mince in a medium saucepan. Add the cumin, paprika and chilli powder (if using), then stir through the kidney beans. 2 Divide rice between two bowls, top with mince, and then garnish with cheese, jalapeños, spring onion and red peppers. Add a dollop of yoghurt or guacamole, and a sprig of fresh coriander.
