CUCUMBER & GINGER SPRITZER

1 cucumber, washed and sliced 8 slices of fresh ginger 2 cups sugar 2 cups water soda water to serve

1 Place most of the cucumber slices (keep a few for decoration) and ginger in a heat-proof bowl.

2 Heat the sugar and tap water in a saucepan over medium heat, stirring until sugar has dissolved. Pour the sugar syrup over the cucumber and ginger slices, cover and leave to infuse for 2 hours. 3 Strain the syrup into a jar or bottle and store in the fridge for up to 2 weeks. 4 To make your mocktail, pour a ¼ cup of the syrup into a cocktail glass with ice. Top up with soda water and garnish with a slice of cucumber.
