CREAMY POLENTA

INGREDIENT­S

• 1 cup cold water

• 1 cup polenta (or pap)

• 3 cups chicken stock or water

• ¼ teaspoon salt

• ¼ teaspoon ground black pepper

• ½ cup grated Gouda

PREPARATIO­N

In a small bowl, combine water and polenta. Let it stand for 5 minutes. Meanwhile, in a medium saucepan over medium-high heat, combine chicken stock, salt and pepper. Bring mixture to a boil. Gradually whisk in polenta mixture, and reduce heat to low. Cook for 20 minutes, stirring frequently with a whisk, until mixture is thick and creamy. Stir in the cheese, and simmer until the cheese melts, stirring constantly.

ADAPT FOR BABY Use water instead of broth, and leave out the salt and pepper to make a filling meal for babies from 6 months of age.
