STUFFED CHICKEN BREAST

INGREDIENT­S

• 1 cup flour

• dried basil

• dried origanum

• 2 boneless, skinless chicken breasts

• 2 garlic cloves, minced

• 4 slices of bacon, cooked

• 4 slices of sun-dried tomatoes, in oil

• 1 cup spinach, cooked and drained

• ¼ cup mozzarella

• vegetable oil

PREPARATIO­N

Mix flour, basil and origanum in a medium bowl and set aside. Slice each chicken breast lengthwise about halfway through – making a pocket. Stuff evenly with minced garlic, bacon, sun-dried tomatoes, spinach and mozzarella. Close sides with tooth picks. Coat both sides with the seasoned flour. Heat the oil in a skillet over medium heat; cook each side until done and cheese has melted (about 15 minutes). ADAPT FOR YOUR TODDLER Slice along the short side of the stuffed breast, and allow your toddler to eat it as finger food.
