MIXED BEANS ON SWEET POTATO
INGREDIENTS
• 2 medium sweet potatoes
•1tin of mixed beans, rinsed
• 1 medium tomato, diced
•2tsp olive oil
•½tsp ground cumin
•½tsp ground coriander
•¼tsp salt
• 2 tbsp low-fat cottage cheese
• 1 tbsp chopped fresh parsley
METHOD
1. Prick the sweet potatoes with a fork in several places. Microwave on high until tender in the centre (12-15 minutes). If you have more time, bake in the oven at 200°Celsius until tender (about one hour).
2. In the meantime, combine the beans, tomato, oil, cumin, coriander and salt in a medium-sized bowl and microwave on high for a few minutes. Alternatively, heat in a small saucepan over medium heat.
3. When cool enough to handle, slash each sweet potato lengthwise, press open to make a well in the centre, and spoon the bean mixture over.
4. Top each with a dollop of cottage cheese and a sprinkle of parsley.
❱❱ NOTE Be sure to eat the skins, as these are full of fibre.
