BAKED BEANS IN TOMATO SAUCE

INGREDIENT­S

•30ml olive oil

•2 garlic cloves, crushed

•1 onion, chopped

•2 celery stalks, chopped

•1 carrot, diced

• 250 ml chicken stock

•400g can chopped tomatoes

• 2x400g cans of butter beans

• Salt and pepper to taste

• Basil leaves from your garden

METHOD

1. Heat the oven to 180°Celsius.

2. Heat the oil in a saucepan, and saute the garlic, onion, celery and carrot until soft.

3. Add the chicken stock, tomatoes and beans. Season with salt and pepper.

4. Transfer the mixture to a large ovenproof dish, and cover with foil. Bake for an hour.

5. Garnish with basil just before serving. ❱❱ NOTE For a great variation, add crispy bacon, or saute slices of sausage to add to the dish. Serve the leftovers for breakfast the next day. Divide between small ramekins, break an egg on top, and bake until the egg is cooked.
