POPCORN BAUBLES

MAKES 12 INGREDIENT­S

• oil

• 125ml (½ cup) popcorn

• 125ml (½ cup) golden raisins

• 330ml (1 13 / cup) sugar

• 180ml (¾ cup) water

• 80ml ( 13 / cup) glucose

• pinch of salt

• 3ml (½t) white vinegar

• red and white ribbons

METHOD

1 Cover the base of a large pot with some oil and heat over medium heat. Add the popcorn kernels and put the lid on. Leave it on until the popping stops.

2 Allow the popcorn to cool and then combine in a large bowl with the raisins.

3 Bring the sugar, water, glucose, salt and vinegar to boil in a saucepan and stir until the sugar has dissolved. Let this mixture cook for about 14 minutes. Your sugar thermomete­r should read 140º Celsius.

4 Pour the warm syrup over the popcorn and raisin mix. Working really quickly, shape little balls. Be careful not to burn yourself.

5 Use a sosatie stick to make a hole through the centre of each ball for the ribbon. Make a knot at the bottom.
