STONE FRUIT COMBO GEM SQUASH & PEACH
MAKES ABOUT 250–375ml
INGREDIENTS
• 2 gem squashes, halved
• 100ml water
• 1–2 ripe, juicy peaches, peeled, stoned and cut into pieces
METHOD
1 Place the gem squash in a saucepan with the water and bring to a boil. Lower the heat and allow to simmer for 15 minutes, or until soft.
2 Remove the squashes and scoop the pips out and discard.
3 Mash up the flesh of the squash with the peaches.
