BREAKFAST PIE

INGREDIENT­S

• 1 packet (300g) puff pastry

• 2 T butter

• 1 packet (250g) bacon, cubed

• 3 leeks, finely chopped

• 200g frozen peas

• 100g baby tomatoes, cut in half

• 4 eggs

• 125ml cream

• Salt and ground black pepper to taste

• 1 cup Cheddar, grated

METHOD

1 Preheat oven to 180°C.

2 Roll out the puff pastry, and cut it into circles slightly larger than the casesofaju­mbomuffint­in.

3 Line each case of your muffin tin with a disc of puff pastry. Place it in the fridge while you make the filling.

4 Heat the butter in a frying pan and fry the bacon until it begins to colour. Add the leeks and fry until soft. Add the peas and tomatoes and stir until warmed through. Remove from the heat, and allow to cool.

5 Beat the eggs and cream, then season with salt and freshly ground black pepper. Spoon the cooled bacon mixture into the pastry discs and top with the egg and cream mixture.

6 Sprinkle with cheese and bake for about 45 minutes or until golden brown and set.
