PIZZA OMELETTE

INGREDIENT­S

• 6 eggs (large)

• 60ml water

• ¼ t sea salt flakes

• pinch of pepper

• 1 T butter

• ½ cup grated Cheddar

• 2 spring onions, sliced

• ½ cup grated mozzarella

• 100g salami or cubed ham

METHOD

1 Put the oven on grill. Crack the eggs into a mixing bowl, add the water, salt and pepper, and whisk lightly.

2 Melt the butter in a large non-stick pan. When the butter foams, swirl it around, then pour in the egg mixture.

3 Sprinkle in the Cheddar and spring onions and stir with a rubber spatula. Leave on medium heat to set slightly.

4 Remove from heat, top with mozzarella and salami or ham, and place under the grill for a few minutes to melt the cheese. Serve with toast and a green salad.
