BROCCOLI & WALNUT SOUP

INGREDIENT­S

• 1 onion, finely chopped

• 2 cloves garlic, pressed

• olive oil

• 1 large potato, peeled and diced

• 1 litre vegetable stock

• 1 head of broccoli, roughly chopped

• 200 g feta cheese

• 4 T roasted walnuts

• salt and pepper to taste

METHOD

Sautée the onion and garlic in the olive oil until soft and translucen­t. Add the potato and sautée for another minute or so.

Add half the stock and simmer for 10 to 15 minutes until the potatoes are soft.

Add the rest of the stock and heat until simmering. Add the broccoli and boil for about four minutes. Add half the feta and nuts and remove from the heat.

Use your stick blender to blend the soup until smooth. Add salt and pepper to taste.

Sprinkle the rest of the feta and walnuts over each bowl when serving.
