ITALIAN BAKED EGGS

• 2 pork sausages, casings removed

• ½ cup baby spinach leaves, washed

• 4 tomato slices

• ¼ cup pouring cream

• 1½t tomato paste

• 1T flour

• ¼t dried oregano

• ¼t salt

• 4 eggs

• butter or olive oil for greasing

1 Preheat oven to 180°C. Grease

4 ramekin or individual ovenproof dishes. Layer the dishes with sausage meat, spinach leaves and tomato, dividing the ingredient­s evenly between the dishes.

2 In a small bowl, whisk together the cream, tomato paste, flour, oregano and salt. Divide the sauce evenly between the dishes, drizzling it over the meat, spinach and tomato.

3 Place the dishes on a baking sheet and bake for 15 minutes. Remove from oven and increase the temperatur­e to 200°C.

4 Crack an egg into each dish, and return to the oven for about 10 minutes until set.
