Glazed salmon

INGREDIENTS
• 1,5kg side salmon • ⅓ cup sweet soya sauce • 2T rice wine vinegar
• 2 cm ginger, peeled, julienned
• 2 cloves garlic, crushed • 1t sesame oil • sliced spring onion and sesame seeds, to garnish
SALAD
•4cupsof Chinese cabbage, shredded
• 250 g mange tout, trimmed, blanched
• 2 small cucumbers, thinly sliced lengthways • ½ papaya, peeled, seeded, thinly sliced • ⅓ cup extravirgin olive oil • Juice of 2 limes
• 2T soya sauce • 2t sesame oil
• 2t caster sugar
METHOD
1. Place salmon in a shallow roasting pan. In a small jug, whisk the rest of the ingredients together. Rub over salmon. Marinate 1 hour.
2. Place a raised rack over your Weber grill. Preheat with lid on to moderate, 180°C. Place baking tray with salmon over rack. Braai, covered, 15-18 minutes, until slightly pink in centre (depending on thickness). Remove from heat.
3. For the salad: In a bowl, combine cabbage, mange tout, cucumber and papaya. Toss with combined remaining ingredients when ready to serve.
4. Sprinkle salmon with spring onion and sesame seeds. Serve with salad.
