OVEN-BAKED BACON When you make bacon for breakfast, do it in the oven. Line a baking sheet with tin foil, lay the bacon in a single layer on the foil-lined sheet and bake at 200°C for about 15 minutes. Drain any excess fat on kitchen paper and freeze what you don’t eat for breakfast. It’s great crumbled over soup or scrambled eggs.

FREEZE BAKED GOODS Make a batch of bran muffins and freeze in sandwich bags. (If you’re not really the baking kind, buy some at your local bakery.) They’re a great breakfast stand-in or to pop in your tot’s nursery school lunchbox – no need to defrost first, they will thaw out by snack time.

MAKE DOUBLE (or triple). When you make pancakes on a rainy day, or waffles on a weekend, make double what you need and freeze the rest. ●
