(Cold tomato soup)
INGREDIENTS
•½ cucumber, halved and seeded, then cut into tiny cubes
•1 red pepper, finely chopped
•2 rosa tomatoes, chopped
•½ red onion, finely chopped
•1 garlic clove, crushed
• 2 cups tomato juice
•¼cup red wine vinegar
• ¼ cup extra virgin olive oil
•½t sea salt
• ¼t ground black pepper
METHOD
1. Combine the cucumber, red pepper, tomatoes and onion in a large bowl or jug. Add the garlic, tomato juice, vinegar, olive oil, salt and pepper.
2. Mix well and chill before serving.
