Dietitian Sue Scharf gives these vegetables top marks for their great nutritional value. Include them in your child’s diet as often as possible. In the colour groups yellow/orange, dark green, white, brown and pink/red/purple, these are the best :
● Carrots contain carotene (vitamin A). The darker the colour of any orange or yellow vegetable, the higher its carotene content.
● Broccoli bursts with carotene, calcium and vitamin C.
● Sweet potato is a slow-release carbohydrate food, contains protein and vitamin C and gives loads of energy.
● Tomatoes are rich in vitamin C and B-complex vitamins.
● Dried beans/lentils are pulses, but these protein-rich foods are slow-release (low GI) carbohydrates full of fibre and have a valuable place in your child’s diet.
