SOUP FOR THE SOUL
Chicken soup is known for its healing and health properties. So, make yourself a pot!
INGREDIENTS
• Bones and carcass of your last roast chicken dinner, for stock
• 2 cups water
• 3 medium onions, thinly sliced
• 2 celery stalks, sliced crosswise
• 4 garlic cloves, crushed
• 2 medium carrots, chopped
• 1 baby marrow, diced
• 1 boneless chicken breast, cooked and diced
METHOD
1. Bring chicken carcass, water, and 1 tablespoon salt to a boil in a large deep pot. Skim foam. Add onions, celery, and garlic. Reduce heat. Simmer, partially covered, for up to 2 hours, then strain the mixture for clear chicken stock, or just remove bones if you prefer a textured soup.
2. Add carrots and marrow. Simmer, partially covered, for 40 minutes.
3. Stir in chicken breast cubes. Skim fat. Season as desired.
4. For a heartier meal, add cooked noodles to the soup when reheating.
