Broccoli & apple soup
INGREDIENTS
• 2T butter
• 1 onion, chopped
• 3 green apples (Granny Smith or Golden Delicious) peeled, cored and cut into chunks
• 1 head broccoli, broken into florets
• 4 cups vegetable stock
• salt and pepper to taste
• plain yoghurt to garnish
METHOD
1. Melt the butter in a large pot. Brown the onion, then add the apples and stir for about 6 minutes. Pour in the stock and broccoli, and simmer for about 20 minutes or until the broccoli is soft.
2. Remove from the heat and use a blender to liquidise the soup. Season with a little salt and pepper. Pour into bowls and garnish with a little dollop of yoghurt.
