YOGURT BARK

INGREDIENT­S

■ 2 cups Greek yogurt

■ 2T honey

■ 4T berries or fruit of your choice chopped up into small bits.

METHOD

1. Mix the yogurt and honey together until well combined. Add half the berries and fruit and stir again.

2. Line a baking tray with foil or baking paper and pour over the yogurt mixture. Spread depending on how thick or thin you want your bark to be.

3. Sprinkle with remaining berries and fruit and place in the freezer for 2-4 hours or until completely frozen.

4. Remove from the freezer and use a sharp knife to break the bark into pieces. The bark can be stored in the freezer in food bags.

COOK’S TIPS

■ Make a different version with different fruit, almonds and desiccated coconut, or blueberrie­s and chocolate chips. You could even use some of your homemade granola.

■ Make sure the tray you choose fits in your freezer and that you have enough level surface for it.
