An an­chovy is a small oily fish, abun­dant all year round in the At­lantic and Pa­cific Oceans which are avail­able fresh, pre­served in glass jars or tins and can also be dried.

They have a pun­gent smell and in­tense taste, putting many peo­ple off so only a lit­tle is needed so as not to over­power the flavours of the other in­gre­di­ents.

They mea­sure any­thing be­tween 2 ­ 40cm and green with blue re­flec­tions due to a sil­ver stripe that runs down its body.

Fishermen of­ten use an­chovies as bait for larger fish such as tuna and sea bass.
