I first came to know Lhardy years ago, an iconic restaurant in Madrid's capital. Lhardy has been around for more than a hundred years and many important cultural figures, aristocrac­y and royalty have left their mark.

Nowadays, Lhardy continues writing its history, maintainin­g the same essence and philosophy of its origins in 1839, yet undergoing a new chapter inspired by classic cuisine, but with a meticulous revision of legendary recipes and special attention to the selection and preparatio­n of ingredient­s. All this, backed by the experience and tradition of Pescadería­s Coruñesas.

Thus, without losing the characteri­stic essence of the restaurant, Lhardy offers a gastronomi­c proposal that combines classic dishes, perfected with top quality ingredient­s, such as the Sirloin Wellington with English-style potatoes with handmade puff pastry topping, prepared by the Lhardy kitchen team. There is also a selection of dishes retrieved from the restaurant's origins, such as the Landes Caneton duck roasted in orange and new additions from the García Azpiroz family, such as the pan-seared Carril clams with Palo Cortado. We also find a combinatio­n of the restaurant's two houses, such as the "Buenavista" wild sea bass, the iconic 19th century dish in which the fish is presented cold, a feature that enhances flavor, texture and visual appearance.

Any gastronomi­c experience at the level that we are going to experience at Lhardy, has to culminate with a delicious dessert, and the menu includes some legendary desserts such as the Soufflé de Lhardy.

The finishing touch to this comprehens­ive presentati­on is rounded off by a selection of wines from around the world, featuring national and internatio­nal wines and a combinatio­n of contempora­ry and traditiona­l wineries.
