Lime Mousse Cake

No matter what the occasion, this dessert will always be the perfect treat after a satisfying meal . Each mouthful will leave a limey fresh taste in your mouth and a craving in your tummy for more!

Ingredient­s (for the base)

2 cups crushed digestive biscuits

½ cup melted butter

1/3 cup sugar

Ingredient­s (for the filling)

8 tablespoon­s lime juice

4 teaspoons gelatin

2 ½ cups whipping cream, divided

350 g white chocolate, chopped

750g cream cheese, softened

1 cup sugar

2 teaspoons lime zest

Grated white chocolate and lime wedges, to decorate

Method

1. Line bottom and sides of a 10 inch spring form pan with baking paper. Combine crushed biscuits, butter and sugar in a bowl. Press this mixture into the bottom and approximat­ely 1 ½ inches up the sides of the pan. Set aside.

2. Combine lime juice and gelatin in a small bowl and leave to dissolve. In a small saucepan, bring ½ a cup of cream to a simmer . Remove from the heat and add the chopped white chocolate. Stir until smooth. Strain in the gelatin mixture and allow to cool.

3. In a bowl, beat the cream cheese, sugar and lime zest at medium speed, with an electric mixer until well combined. Beat in the cooled white chocolate mixture into the cream cheese mixture.

4. Lastly beat the remaining 2 cups of cream in a large bowl with an electric mixer, at high speed , until soft peaks form. Fold into the white chocolate mixture and pour gently into the pie crust. Cover with clingfilm and freeze overnight.

5. To serve, remove from the freezer , take it out of the pan and place on a serving dish or platter. Decorate with grated white chocolate on the top and lime wedges placed randomly on the platter, around the base. Slice and serve. Just perfect!
