With my mother’s garden boasting a bountiful crop of custard apples or “Atha”, my mission was to find a custard apple recipe that all would love. With their funny, green scaly “dino” skin, as my children like to call it, it’s obvious to say that these little beauties were not welcome much in my household. I on the other hand love them wholeheart­edly, their creamy sweet perfumed flesh is a delight and I can sit many a blissful moment, devouring custard apples by the bucket load. So when stumped for ideas, always think of cake and that is surely what I did. Into your typical cake batter incorporat­e the custard apple flesh devoid of seeds, and before you know it you have the perfect teatime cake. Buttery sweet and fruitilici­ously perfumed with the custard apples, it gives a sense of exotic wonderment to your everyday tea time affair.
