Lemon Jello Cake

Don’t you always have that pesky packet of jelly sitting in the back of the cupboard, waiting for that party to make its big entrance? Well, it doesn’t have to wait any longer with this incredible little recipe that found its way to me. One bite of this incredibly easy masterpiece will have you feeling the comforting summer breeze on your shoulders. Delightful, refreshing and quite easily a decadent dessert with either a dollop of ice-cream or a more healthier option of a fruit compote, this lemon jello cake should be part of your tropical nights!
Ingredients
Cake
1 butter cake mix
4 large eggs
1 /3 cup water
2/3 cup oil
1 regular package lemon jello (small box-3 oz) Icing
Juice of 2 Lemons
1½ cup powdered sugar
Instructions
1. Preheat the oven to 350 degrees. 2. Cover a cake pan with some butter and sprinkle with flour. 3. Tip and tap the edges of the cake pan to coat it with flour. 4. In the bowl of a mixer, mix the cake mix, eggs, water, oil and jello together. 5. Pour into greased and floured 9x13 pan.
6. Bake at 350* for 27-30 minutes.
7. When cake is done, prick with a fork while still hot. 8. Immediately pour lemon icing over top.
Icing
In a small bowl, mix the lemon juice and powdered sugar until smooth.
