Q Share a glimpse of the life of Lanka Dairies (Pvt) Ltd and “Ambewela” products. Liquid milk was distributed either in sterilized bottles or pasteurized milk sachets during the days of LDL’S infancy, ever since its inception in 1996. Also, distribution was restricted only to urban areas where efficient transportation and refrigeration facilities were available.
To enhance the shelf life of liquid milk, it should be purified by removing all microorganisms and other contaminants before packaging. Packaging should be hermetic to refrain from recontamination. These requirements can be fulfilled by pasteurization or sterilization of milk, following suitable packaging methods. However, these technologies have its own pros and cons. Sterilization is a hard heat treatment to milk (i.e. milk undergoes high temperature during longer time- i.e. Deep cooking) as a result its nutrients and other vital properties can be destroyed by transforming the product from natural to unnatural. It is a well-known fact that shelf life of sterilized milk is three to four months at ambient temperature in a sterilized glass bottle. However, this method has disadvantages over other methods, and has a higher possibility of milk nutrient deterioration due to exposure to UV rays through the glass bottles.
Unlike sterilization pasteurization is a mild heat treatment to milk (i.e. milk undergoes low temperature during shorter time-i.e. Mild cooking) As a result, complete sterilization is impossible and some living microorganisms are still retained within milk is needed to be kept below four degree Celsius to inactivate these living microorganisms until it is consumed.
Since availability of refrigeration facility was restricted among countable consumers in Sri Lanka, distribution of pasteurized milk was a challenge with an extreme risk of recontamination due to possible discontinuity of cold chain.
Knowing the disadvantages of above two technologies in providing quality milk at an affordable price to an average consumer, Lanka Dairies (Pvt) Ltd introduced a new method of treatment and packaging for liquid milk to the Sri Lankan market for the first time in 1996. This was a breakthrough development to the Sri Lanka liquid milk industry.
In this technology all the disadvantages of sterilization and pasteurization process have been mitigated to a minimum while keeping the milk close to the nature. This is also a heat treatment method to enhance shelf life of liquid milk by removing all microorganisms in milk. During the process, liquid milk undergoes a moderate heat treatment (i.e. Ultra-high temperature during very short time – Optimum cooking) and immediately followed by packaging in an air tight sterilized container without recontamination. In a nut shell, this is called Aseptic Packaging. The main advantage of this method is, it retains freshness and nutrients of milk as it is, and shelf life of milk can be extended to more than six months without refrigeration at an ambient temperature. Because of multilayered flexible packaging, freshness of milk is kept intact during shelf life since it is protected from environmental hazards such as exposure to UV rays, obnoxious gases, dust and other possible contaminants.
Q What can you say about the farms which gives you the high-quality milk?
Good milk is produced through a process; a process rich with stringent hygienic practices that are to be followed by farmers and producers alike. Even then, the enaction is questionable. The quality is sub-par if the farm lacks proper cleaning and maintenance to of equipment used to take care of its livestock. Lanka Dairies (Pvt) Ltd, felt the need of a central management system to extract high quality milk. Two well-known farms in Nuwara Eliya were acquired for this purpose; namely Ambewela and Pattipola farms.
Ambewela farms are located at 6000ft above sea level in the cool environment of Nuwara Eliya, the most suited climate for healthy cows. Ambewela cows graze in lush green meadows, breath clean fresh air drink pure water from mountain streams and are looked after by a team of dedicated professionals.
