CHEESY CARROT STARS

When I first started weaning my eldest, I was like a deer caught in the headlights. Scared, petrified and totally bewildered I was a mess of contradict­ions and over thinking. Luckily Annabel Karmel’s guide to weaning baby right was introduced to me by a fellow mum and it was my bible for every child that followed suit! The harshest demographi­c to please, catering to toddlers and infants is the hardest feat that any mother faces. You want your baby to eat right, eat their greens, get all the nutrients that they require, but of course baby has other ideas, and your carefully mastered Michelin star dish usually ends up on the kitchen floor, with you in tears! Therefore, these cheesy carroty stars were an absolute win in our household, even to this day when I have teenagers around my table and surprise even the odd adult gives them the five star rating!

Ingredient­s

● Bowl of grated carrots

● 1 cup of flour

● 2 eggs

● 1 cup of grated cheese

● 1 cup of grated mozarella

● Chopped green chillies

● Chopped onions

● Star cookie shape

Method

1. In a small mixing bowl, mix the grated carrot with some water, cover and microwave on high for 3 mins. Alternativ­ely, you can steam or boil. Put the carrots into dish cloth or muslin cloth and squeeze out all the excess water.

2. Add the dry carrots back into the bowl, add the eggs, flour and give it a good mix. If too wet, add some more flour.

3. Next add your chillies, onions and extra seasonings. If making for very small children you can avoid this step. Add your cheeses and mix thoroughly.

4. Place a star cookie cutter shape on a baking tray, pour the carrot mixture into moulds. It’s safe to say that you can use any shape you prefer.

5. Fill until complete and the cookie cutter can be removed. Bake in the oven until golden! Enjoy!
