● 6 leeks halved.

● 12 slices Ham.

● 50gms butter.

● 50gms flour.

● 1 pt milk.

● 3 fl oz cream.

● 100gm grated


● 4 tbsp bread crumbs seasoning.


Make a slit down each halved leek without cutting through completely. Tie leeks with string. Cook in lightly salted water for 10 mins till soft. Drain. Pat dry on a clean cloth. Remove string.

Wrap a slice of Ham round each leek and place in dish. Melt butter. Stir in flour Add milk. Bring to boil. Remove from heat, add cream, seasoning. Spoon sauce over, sprinkle with cheese and bread crumbs and bake till golden brown.
